Your furthest-right zone is most susceptible to missed orders. Either keep your eyes peeled for orders of that colour, or have a Clear-orders bonus waiting on your bonus wheel.
You don't have to charge a bill as soon as you enter the price. Calculate the total, key it in... then wait.
Allow faster orders to catch up with slower ones of the same colour / uncoloured, so you can match them all on a single zone and get big multiplier bonuses.
Think ahead; if your prices won't come out pretty in this service, set them up so you can fix it next time.
Focus all your price rises on a single sushi item - preferably your leftmost one - and ignore orders of other colours.
Waxy is beautiful and very talented, but also completely useless. Don't look at him - he doesn't need the distraction. Keep your eyes on the service plate, bonus wheel and service timer.
On higher difficulties, the game is noticeably harder - but the rewards are even higher. With luck on your side, you can score a x2 or even x5 final service multiplier - but only on Hard mode...
